Organic Coconut Sugar
Coconut sugar contains many essential minerals that are not found in white sugar, most notable being Zinc, Calcium, Potassium along with polyphenols and antioxidants. Many dieticians and doctors in recent years have found sugar to be the leading cause of weight gain when it comes to maintaining a healthy diet. Coconut sugar has been suggested as a healthy alternative to white sugar for several reasons, number one being the low glycemic index it possesses-attributed to a fiber called Inulin. Foods with high glycemic indexes tend to spike blood sugar levels rapidly, which explains why sugar is such an evil for those with diabetes. Coconut sugar has a caramel, nutty taste that is an interesting switch from regular white sugar.
How it’s Made
Pancake Organics’ coconut sugar is traditionally produced from a local, family-owned farm in Central Java, Indonesia. Organic coconut sugar is collected from the sap of the flower at the top of the coconut tree. Afterwards, the process of turning the sap into sugar involves boiling for several hours to remove the moisture from the sap to form a thick paste, and granulating the paste into sugar. The crystals must be sifted through to ensure only the finest quality remain, and finally it is transported into an oven to dehydrate and separate out any remaining impurities. Before being packaged and sent out for distribution, Pancake Organics tests our products through moisture testing machines, volt magnets and metal detectors to ensure the product meets our strict quality standards.
Organic Coconut Flour
Coconut flour is made from dried, ground coconut meat. The flour itself has slight hints of coconut flavor and an airy texture. It can be used in baking as a replacement for all-purpose and wheat flour, and is considered a part of the paleo diet. It is a healthier, low- carb andhigh-fiber ingredient as well as being gluten-free. Coconut flour packs a whopping 5 grams of fiber per 2 tablespoons (with only 2 grams of total and saturated fat). It is also a smart option for those with diabetes due to its low glycemic index (a measure of the rate that food increases blood sugar). The protein levels found in coconut flour are much higher than in wheat flour (19g per 100 gram serving compared to 10g).
How it’s Made
Pancake Organics’ organic coconut flour comes from our coconut farmers in The Coconut Triangle located in Colombo, Sri Lanka. The workers use machines to grind away the husk and kernel of the coconut, and peel away the brown outer shell until only the white nut remains, which is cracked open and sent on a conveyer belt for shredding and dehydration. The dried shreds are put into a wet-mill to separate the oil and milk from the flour, and then ground into a soft, fine powder. Before being packaged and shipped for distributions, all of Pancake Organics’ products are tested through volt magnets and metal detectors to ensure the product meets our expectations for quality.
Coconut Chips and Flakes
Shredded coconut is a popular ingredient in several baked good recipes;it is commonly used pies and cakes. The unique, satisfying taste of coconut has been a staple in Eastern Asian savory dishes such as curries and soups, and is now making its way into Western cookbooks. Shredded coconut is a good vegetarian source of protein, as well as fiber. One cup contains 2.68 grams of protein and 4.2 grams of fiber, providing a decent chunk of the daily goal for men and women. Coconut chips and flakes are gaining popularity as a healthy alternative to sodium-packed potato chips or pretzel snacks. The flakes can also be sprinkled over a bowl of granola or yogurt. Pancake Organics’ distributes desiccated coconut in three sizes: large chips, medium flakes and fine flakes.
How it’s Made
Pancake Organics’ coconuts are handpicked from the Coconut Triangle in Colombo, Sri Lanka. Similar to the process required for coconut flour, the husk and kernel are ground away and the brown shell peeled off leaving only the white coconut meat. The meat is placed on a conveyer belt that separates the coconut to be cut into three sizes: large chips, medium flakes and fine flakes. After the meat is cut, it is sent into a dehydration chamber to remove moisture. Before being packaged and shipped, the coconut chips and flakes are sent through several sieves to reduce clumping and ensure size consistency before going through volt magnets and metal detectors to ensure our product carries the standard of quality we promise to our customers.
